Organization of projects

Hello everyone!

Being new to this hobby, I'm curious how you all organize your projects as they are being worked on. Right now I just have things somewhat strewn about on my desk and work bench. What do you use for storing the parts for each plane, paper plans, etc. as you go along?  Thanks for all the help and encouragement from everyone I've received so far.
