Here is a video for making clear canopies. This video is for free flight model airplanes but can be adapted to many other model subjects.
The material of choice is PVC heat shrink tubing, mostly used to make battery packs. The material is pretty cheap and easy to get online. With this material all you need is a form and a hair dryer. That's it. The video is almost 30 minutes long but it shows how to make several types of canopies, multi piece canopies, and how to frame and attach the canopy.

I think this is great method to make clear canopies. A model could be fully carved with the solid canopy and then a heat shrink canopy could be formed directly over it.

Yep, and you don't have to make a vacuum form machine nor gather the equipment. Also don't have to bother with polystyrene.
